Overnight Soaked Oatmeal
Ok I am obsessed with this right now. So, so easy and quick! You have probably seen some of these recipes on Pinterest (yes I’m aware I have a problem), it’s where I got the idea. I will provide a link at the bottom for those recipes but here is my basic recipe.
In a mason jar add and mix:
1/3 cup rolled oats
1/2 to 1 packet stevia (or drizzle in some maple syrup)
1/4 tsp to 1/2 tsp cinnamon
2/3 cup or more of unsweetened almond milk or milk of choice
Add in, stirring gently:
1/3 cup (give or take) of frozen berries or fruit of choice
Let soak overnight and you are good to go! I know you might be weirded out, but soaking the oats makes it completely digestible. I don’t really like to eat a hot bowl of oatmeal in the spring/summer, so this is a great way to add in seasonal fruit and have a chilled breakfast!
Optional in am:
Adding in the flax and protein powder can make the oatmeal quite thick (can just add more milk) so I would start out with basic recipe above and then experiment with each of these things before going all gung-ho.
2-3 tsp ground flax or chia. Can also use chia seeds but make sure you add those in with the rest of ingredients to soak overnight
Small handful raw almonds for some crunch
